Spicy Buffalo Chicken Dip

I have two little boys, and when Easter rolled around this year, I thought it only appropriate to throw another Easter Egg Hunt at my house just for the tiny ones again this year. When you take babies and toddlers to the community Easter egg hunts in town, they seem to always group them 0-5 years of age and the older kids in the group just mow down the smaller ones.
There’s no chance of the smallest kids in getting any eggs, so I throw my own hunt and have WAY too many eggs each year. Everyone gets plenty of Easter eggs and they can take all the time in the world to find them. Meanwhile, the parents get to gab and take pictures of the little ones at play while munching on a yummy potluck of dishes.
I never know what to expect and have been at too many parties where the food ran out fast, so I always prepare a host of wonderful recipes to share. I’m totally a chip and dip kind of person and this is one of those recipes I crave at times. I enjoy entertaining and I enjoy cooking, so you can always expect at least a couple dips at any of my get-togethers. I haven’t always been so adventurous though. My dips used to consist of salsa and the bean dip you could purchase from the store, but that was before I knew how to cook.
This is so easy, there’s no reason not to make it yourself though! Let me show you just how easy it can be.

I added my cream cheese, sour cream and Ranch dressing all to one bowl and zapped it in the microwave twice at 30 seconds until the cream cheese was soft enough to mix in.
All mixed together with a fork. I have absolutely no patience.
And then I spread it into the bottom of my dish.
Next I dumped my shredded chicken in another bowl and poured the buffalo sauce on top.
And mixed it all up really well. Boy was it spicy smelling!
Then I spread it all over the top of my cream cheese layer.
And topped that with shredded cheese.
I popped it into the oven and baked for 20 minutes.
It got a little overdone because it was set on top of a hot stove burner upon coming out of the oven. I was wondering why it was boiling when it should have been cooling.

Cook Time: 20 minutes Yields: One 9 inch pie dish of dip
Ingredients:
- 1 package (8oz) cream cheese
- 2/3 cup Ranch dressing
- 1/2 cup sour cream
- 2 cups cooked and shredded chicken
- 1 cup buffalo sauce
- 1.5 cups shredded cheese
Instructions:
- Preheat oven to 400 degrees F and grease one 8 or 9 inch pie dish.
- Combine the cream cheese, Ranch and sour cream in bowl. You may need to heat it a little at a time to get the cream cheese to mix in.
- Spread the cream cheese mixture evenly in the bottom of your pie dish.
- In a separate bowl, mix your shredded chicken and buffalo sauce. I already had cooked, shredded chicken on hand. You may need to start this recipe by cooking your chicken.
- Spread this mixture evenly over your cream cheese layer in the pie dish.
- Finally spread shredded cheese (I used cheddar) over the top of your dip and pop it into the oven.
- Bake for 20 minutes. Mine got a little overdone because it was set on a hot stove top burner after coming out of the oven. (Whoops.)
- Enjoy with chips and good friends!
