Moist Brown Sugar Banana Bread

I have a great friend back in Arizona that makes the most delicious banana bread in her bread maker. Now I’ve had tons of banana bread in my life. In fact, I’ve made a ton of banana bread in my life. Maybe it’s the love and selflessness that goes into it that tastes so good, but it’s wonderful.
Well, it just so happens that we had to move out of our home in Arizona and the only place that made sense was out to Colorado near my husband’s family. We left lots of wonderful friends behind when we left that came and helped us to pack and move, but this one was the dearest. And on the day that we left, she brought me a loaf of her banana bread that I ate the entire trip out to Colorado.
There’s something special about banana bread. I have hear tons of stories like my own where they fondly remember a loved one’s banana bread because it made them feel loved. I’m sure you have a similar memory yourself. But how is it that everyone makes banana bread so incredibly different, some with nuts and some without, some with brown sugar and some without, some with veggies or chocolate or other fruits and some without, and yet everyone loves banana bread?
Well, this is my special banana bread recipe. I like to add brown sugar for depth and sour cream for moistness into my bread, oh, and walnuts. Yum! It doesn’t last long around here when I make it. My toddler seems to think it’s candy. I hope you enjoy it just as much.

Start by mashing up a couple ripe or over-ripe bananas with a fork.
In a separate bowl, add all of your wet ingredients and mix.
Then combine your wet ingredients with your mashed bananas.
Then add your dry ingredients into the same bowl and mix. I had trouble keeping my little one out of this bowl. He’s used to being able to measure and mix with me.
Side note: It’s very difficult to take decent cooking pictures with an interested 3 year old around.
Chop up your walnuts. I suggest a bigger cutting board if you’re going to do this step. I had walnuts everywhere. I’m not as neat as I thought.
Mix everything altogether.
Grease up your bread pan. I’m not a big fan of cooking spray, so I use coconut oil. I really love my Butcher Boy coconut oil mainly because of the great deal I get on it and it comes with great reviews!
Pour your bread mixture into the bread pan.
And pop it into the oven at 350 degrees for 1 hour.
Moist Brown Sugar Banana Bread recipe
Cook Time: 1 hour Yields: 1 bread loaf
Ingredients:
- 2 medium bananas
- 1/2 cup butter
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup sour cream
- 1 cup brown sugar
- 1.5 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped walnuts
Instructions:
- Preheat your oven to 350 degrees F and grease a 9×5 inch loaf pan.
- Mash 2 medium bananas in a small bowl.
- Combine all wet ingredients in a medium bowl.
- Add in bananas and mix.
- Next, add in all dry ingredients and mix.
- Finally, chop and add in walnuts if you so desire. Mix thoroughly.
- Pour mixture into a loaf pan and top with additional walnuts.
- Bake for 1 hour.
- Let cool and enjoy!

Boy is this bread great for a nice warm breakfast, a scrumptious snack in the afternoon, or even a treat after dinner in front of a movie. This is truly a treat around here. I hope you’ll give it a try yourself.

This is the best banana bread!Love the brown sugar flavor and oh so moist..for days! I always seem to have over ripe bananas and am making banana bread a couple times a month. This is now my go to recipe! Tried this recipe a few weeks ago and got rave reviews. Have my 2nd batch in the oven now..smells so good I cant wait for it to be done.
