When you have kids, sometimes life gets busy. I think we’ve all been there. For us, Awanas goes right through dinnertime. We can drop off our toddler and go out for a date night, but then he’s starving and needs something nutritious for dinner on the way home. We needed some ideas for a fun and healthy dinner on the go and so we started trying out a variety of ideas.
At his age, if you give him anything relatively wet, it has notoriously ended up on the roof, the back of the seat in front of him, all over his car seat and covering the door and window bedside him. I’m not the one who gave him oatmeal in the car, but I’ve been trying to scrape it off of every surface within a couple feet of his car seat for months.
You may have older kids and not have to worry about this. So many articles offering on the go meals just wouldn’t work at this stage of our lives. Obviously we need toddler friendly on the go meals. Normally we settle for peanut butter sandwiches and several bags of goodies like bell pepper slices, chopped carrots, peas, nuts, celery, apple slices, etc. and we can all munch on them.

But sometimes I turn on Super Mommy and we get some really fun dinners on the go and we can eat like kings in the car at a drive in movie, or on the way home from a playdate, or coming home from church. I thought I’d share some of these awesome creations with you.

Quesadillas
No one says that these have to be boring. So your kid just wants beans and cheese, but you could have chicken, pesto, tomato slices and spinach. Yum! Or consider ham and Swiss, broccoli and cheese or pizza quesadillas. And because cheese usually binds it all together, there’s very little mess on small hands or the car.

Burritos
Burritos can be just as creative, but remember those little ones in the back seat. What about roasted veggie burritos or black bean and butternut squash? You could do pulled pork burritos or chicken broccoli and cheese. Burritos don’t always have to be meat, beans and rice, but if that’s what you like, go for it!

Calzones
I still think that the absolute best calzones are the pizza flavored ones. Yummy! I could eat those everyday, but it’s easy to mix them up a little and offer up some of your kids favorites baked in a calzone. Try sloppy joes, with a little less sauce for a cleaner meal. Or even better, go for lasagna or bbq chicken calzones. My mouth is watering writing this!

Waffle Sandwiches
These are a favorite in our house because you can get creative with the waffle mix and they are fun to eat. Consider a ham and cheese panini or a pesto grilled cheese with tomato basil waffles in your waffle iron. Or our favorite, zucchini parmesan waffles with mozzarella melted in the middle.

Sandwich Rollups 
My toddler’s favorite is either ham and cheese in a tortilla or hummus and chicken lunch meat in a tortilla. Me, I want something Italian wrapped in a spinach tortilla, and my husband likes lots of mayo. I don’t know what else he puts because I leave the room at that point. But that’s one thing that’s great about these. Everyone can have their own.
Anything in a Mason Jar
So I’ve been seeing a lot of salads in jars, and as delicious as they look and sound, they just wouldn’t work for us in the car. However no one said we couldn’t put other things in a jar. Include a fork and napkin and we can put almost anything in a mason jar. And what’s great is that the lid can be screwed on when finished to lock the mess inside.

Bite-sized Chicken Nuggets
Finger sized chicken nuggets are perfect for the car. No mess, fun to eat and you can get creative with the ingredients. Mix in some flaxseed and spinach or onion and zucchini for a real treat. You can even make a quinoa crust or make it with crushed almonds for an interesting flavor.

Veggie Meatballs
These come out different every time in our house because I never use the same vegetables. So into a normal meatball recipe, I mix carrots and any other veggies I have hanging around after putting them in the food processor. This last batch had brussel sprouts and broccoli with the carrots and they were my family’s favorite so far.

I love making fun dinners like this when we need to ready on the go. In fact, sometimes we pack a dinner and go for a picnic on purpose just to get out of the house. It’s fun to shake things up a bit every now and then.
And I can generally use whatever we happen to have in the house for our ingredients, and we just package it a little differently every time. I love that our kids are learning to eat a variety of foods and that they experience good food being fun and exciting. If you have to eat on the run, why not make it an adventure.
