Creamy Cheesecake Freezer Bites

There are so many fun pre-made desserts in the store that I always wished I had in my freezer. The way they are packaged and the yummy pictures on the cover make them hard to pass up, and that’s on purpose. Those dessert companies have highly paid advertisers working for them to make their creations so tempting and convenient that they are ultimately irresistible
Unfortunately they never taste quite as good as the packaging makes them look. But what options do you have? most people don’t know how to make banana cream pies and chocolate mousse pies, much less strawberry swirl or turtle cheesecake with the little chocolate twists on top. That would take a lot of work, right?
No way! You’re about to have your own decadent cheesecake that you can flavor however you’d like, even if you want to grate some of your chocolate bar on top to get the little swirls. I’ll even show you how to make your own guilt free delicious caramel with 2 easy ingredients and your own fudge topping. First I blended up my almonds in the food processor until they were as fine as I could get them.
As the almonds were blending, I went ahead and lined my casserole dish with parchment paper and melted my butter.
Then I mixed my blended almonds into the butter in a small bowl.
And I used another piece of paper to press my almond crust down into the dish flat so my hands wouldn’t stick to the almonds.
Next, I mixed all of my cheesecake ingredients until smooth.
And I poured the batter into the dish and spread it out evenly.
I popped the dish into the preheated oven and set the timer.
While it was baking, I mixed my topping ingredients together.
Time to pour it on top of my cheesecake.
I spread it flat and baked for another 10 minutes. When done, I let it cool and then froze it for a couple hours in the freezer. I went back later and pulled it out of the dish so I could chop it up. Parchment paper makes it easy.
I then used a big knife to chop it all up into small pieces. At this point you could store them in the freezer in a storage bag until you were ready to eat them.
Ingredients
Crust:
1 1/2 cups almonds
1/2 cup grass-fed butter
Filling:
2 eggs
16oz cream cheese
1/3 cup raw honey, melted
2 teaspoons vanilla extract (my homemade recipe)
Topping:
1 cup organic vanilla yogurt
1/8 cup raw honey, melted
1 teaspoon vanilla extract
1) Preheat your oven to 350 degrees F and line a 9×13 inch casserole dish with parchment paper.
2) Pour your almonds for your crust into the food processor (or blender) and process down as fine as you can.
3) Pour your blended almonds into a bowl and mix with your butter.
4) Press into the bottom of your casserole dish as evenly as possible.
5) Now mix your cheesecake ingredients until smooth and spread on top of your crust.
6) You’ll go ahead and bake the cheesecake for about 25 minutes.
7) Then remove and cool before the next step.
8) In a small bowl, mix your topping ingredients until you have a smooth consistency, and pour the topping over your cheesecake once it has cooled slightly.
9) Now pop the whole thing back into the oven for an additional 10 minutes. The toppings will still move but should be relatively firm once cooled.
10) Remove from the oven and cool once again, but this time, you’ll slide the whole dish into the freezer for an hour.
11) After frozen pull it out of the dish by the parchment paper and cut up in little squares.
12) Now you can store them in a storage bag or airtight container in the freezer for anytime you want a bite of sweetness.
If you’d rather have a regular cheesecake, you can always make it in a pie dish, pressing the crust up the sides and skipping the freezer step. Enjoy!

This was so easy to make and everyone in my family looks forward to it. It truly tastes 100% better than anything you could buy at the store, and so do all of my other healthy desserts. Easy to whip up, made with good wholesome ingredients and as easy to have on hand as whipping up a few and popping them into the freezer.
This one bag of cheesecake freezer bites will likely last us a month because we’re only going in to get one little piece each time. You can do this with all of my pies and cookies as well. Imagine not only being able to eat the desserts you love without having to worry about your diet, but having them on hand anytime a craving hits.
