Rich and Creamy Homemade Peanut Butter Cups

These rich and creamy homemade peanut butter cups are delicious and they are made with natural healthy ingredients. They were so quick and easy that even my toddler was able to make them. We love sweets in our house and are always whipping up something. One week it was brownies, then popsicles, and the next cheesecake. But this week was Homemade Peanut Butter Cups. Yum! My little one was so excited when I asked him if he’d like to make some candy.


Honestly these are so quick and easy that there’s no reason not to have a constant supply of them at all times, other than the fact that we’d probably get sick of them after a while. Nah! The perfect mixture of yummy dark chocolate chips and creamy peanut butter, kept in the freezer so you can have one anytime you’d like.

The first thing I’ll suggest, other than having some muffin tins, is to have some silicon muffin cups around. They are super cheap and considering the fact that I can use mine over and over again, and simply wash them in between, is a life saver. I never have to worry if I have any muffin cups when I need them.

I can pour my ingredients in, freeze (or bake) them, depending on what I’m making, and the food just slides right out, just about leaving them as clean as when the ingredients went in. Let’s look at how I made them.

Line a muffin pan with your muffin cups and get your mixes ready.

Pour about a 1/4 to a 1/2 inch of chocolate in each one, and tap down to level out.

Including diving in after freezing them for a few hours.

Ingredients

  • 2 cups dark chocolate chips
  • 2 1/2 tablespoons coconut oil, melted

Topping:

  • 1/2 cup creamy peanut butter
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons honey, melted

Instructions

  1. Fill each of the segments in a muffin tin with muffin cups. (I prefer to use silicon muffin cups because they are cheap, reusable, and they don’t stick to your food.)
  2. In one bowl melt your chocolate chips and coconut oil in small increments in the microwave.
  3. When they are melted, quickly spoon out your mixture into each of your muffin cups. They should cover at least a 1/4 inch into the bottom of all 12 muffin cups. Feel free to melt more chocolate chips if you need them.
  4. In another bowl, melt all of your topping ingredients together until smooth.
  5. When melted and smooth, spoon out your peanut butter mixture into each of your muffin cups on top of your chocolate.
  6. When finished, pop the entire muffin tin in the freezer for 30 minutes or so. You can store them in a storage bag in the freezer for future enjoyment.

These are so delicious! The trick is to work fast though. As soon as your chocolate comes out of the microwave, it’s going to start hardening, so you have to be ready. If you notice that the coconut oil isn’t mixing in and you feel like you have too much in either mixture, you are welcome to pour a little of the extra liquid off. But keep in mind that the coconut oil is going to make your candy a little easier to eat as well.

These have only been in our freezer for 24 hours and over half of them are already gone. I’ve been trying to regulate them in a house of 3 boys, but it’s hard when I love them too. Oh well, I guess we’ll have to make some more!
