This Instant Pot Chicken and Dumplings dish was so amazing last night that I can’t postpone telling you all about it. I love chicken and dumplings. I first tried it at my stepmother’s house when I was very young. Unlike everyone else’s recipe using biscuits or making their own dumplings with flour, she used tortillas as her dumplings. It was delicious.


Unfortunately, her recipe was like 6 pages long and had so many ingredients and instructions that it took 15 minutes just to read and understand it. I haven’t made it very often over the years just because it was such a complicated recipe, but it still remained my favorite all-time dish.

Last night, looking through all of the ingredients in my refrigerator and trying to figure out what to make for dinner, all I could think of was chicken and dumplings. If only it wasn’t so hard to make, and didn’t include so many processed ingredients. But I was really craving it. Could I make it in my Instant Pot? Let’s give it a shot.

I tried out a few ingredients and figured I could doctor it up when it came out on the other side if necessary. Man, did it turn out amazing, no doctoring needed. I think I made more moise just enjoying my dinner for the evening than my toddler did playing on the other side of the table. And by the way, he loved it too!!

I got this great Instant Pot for Christmas this last year and it’s been great. I started this recipe with about 4 cups of chicken broth, a handful of crushed up freshly made dehydrated onions, and a sprinkling of celery salt.

I then tossed in about 1lb or 2 chicken breasts of chicken, sealed my Instant Pot up and manually set it for 10 minutes.

In the meantime, I sliced 4 tortillas into 1 inch strips.

When the Instant Pot was done, I let it naturally release it’s steam for about 15 minutes and then manually released the rest of the steam myself. Then I broke up the chicken into small pieces.

Finally, I dropped in my tortilla strips and set the Instant Pot to saute, stirring frequently until the tortillas were swollen and looked more like dumplings.

Ingredients

4 cups chicken broth
1/2 cup dehydrated onions (You could use 1/2 onion, diced)
1 teaspoon celery salt (You could use 1 celery stalk, diced)
1/2 teaspoon pink Himalayan salt
1/2 teaspoon black pepper
2 chicken breasts, raw
4 whole wheat tortillas, cut into 1 inch slices

Instructions

Pour your chicken broth into the Instant Pot.
Add in your onion, celery salt, salt and pepper.
Slide in your 2 chicken breasts.
Seal up your Instant Pot and set it manually to 10 minutes.
Slice your tortillas into 1 inch strips.
Let the Instant Pot naturally cool down for about 15 minutes.
Then release the steam valve and let all steam release before opening.
Shred chicken and add in tortillas.
Set Instant Pot to saute and stir periodically until the tortillas have swollen up and the liquid in the pot has thickened, about 10-15 minutes.
Serve with your favorite veggies.

If you don’t already have an Instant Pot, it’s sure one you will want to consider putting on your Christmas list. I can make anything from rice and boiled eggs, to soup and enchiladas in my Instant Pot. It’s nice just to be able to drop something in and be able to walk away knowing that it’s going to be done when I come back.

Granted, if I can prepare ahead, I can drop something in the crockpot, or if I have the time, I can cook everything in the oven or in a pot on the stove. However, having two children pulling on me and demanding my time, especially around dinnertime, it’s nice being able to drop stuff in and walk away.

I have to tell you that I was truly surprised at home delicious this turned out. I was prepared to add heavy cream or even more seasonings when it was done, but I didn’t end up needing to add anything. I always used cream of chicken soup, and a host of other spices in my former recipe. Yes, it is now my former recipe, because now that I know that I can have chicken and dumplings anytime this quick and easily, I’m never going back.

To tell you the truth, I would have normally added onions and celery as well, but I had just finished my dehydrated onions and had them handy, and I didn’t have any celery. I didn’t want to add or make cream of chicken because my patience was a little dicey last night, but it turned out perfect. My husband even had compliments for me.

This is definitely one that’s going to be a regular from now on.
