Fresh baked bread is delicious any day of the week, but then add in yummy flavorful pureed pumpkin and banana and you’ve got the perfect treat for the Fall season. We can’t get enough of it over here. The familiar heart-warming taste of homemade banana nut bread mixed with cinnamon, nutmeg, ginger, cloves and allspice and, of course, pumpkin, has been an irresistible delight first thing every morning as the air cools down and the leaves are changing color.


We really get into the Fall season and like to pair this with homemade hot pumpkin spice lattes or hot pumpkin spice tea.  Yes, my toddler absolutely loves “sharing” (or in other words drinking it all) my hot morning drinks with me. Thank goodness I don’t drink anything that isn’t just as good for his body as they are for mine.

I have to say that it’s also super convenient to have a slice of this pumpkin banana bread when I’m trying to wrangle kids, pets, the house, naps, and sometimes even taking my husband to work in the morning. It’s already made and can simply be sliced and served on a napkin for a quick and easy breakfast for everyone. What more can you ask for to make this Fall season that much more relaxing and enjoyable for you?

I like to add in all of my dry ingredients first so that I don’t get my measuring spoons and cups all wet before needing them to measure out dry ingredients. So I started by adding in my flour, baking soda and all spices to a large mixing bowl.

Then I added in my eggs, vanilla extract and milk, before mixing up my fruit in a separate bowl.

It’s easier to mash the bananas and pumpkin together in a separate bowl first, rather than trying to mash them while mixing all of the ingredients together.

My coconut oil and honey always go in last so that I can melt them together before pouring them in the bowl.

Mix everything together well. Then pour your batter in your prepared loaf pans.

This may be easier to spoon into your pans rather than pour. I like to top mine with walnuts before baking.

Ingredients:

  • 4 cups whole wheat flour
  • 1 1/2 tablespoons pumpkin spice
  • 1/2 teaspoon pink Himalayan salt
  • 1 1/2 teaspoons baking soda
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup milk
  • 2 cups pumpkin puree
  • 2 ripe bananas
  • 1/3 cup coconut oil, melted
  • 3/4 cup raw honey, melted
  • 1 cup crushed walnuts

Instructions:

  1. Preheat your oven to 350 degrees F and line two bread loaf pans with parchment paper.
  2. Mix all of your dry ingredients together, and then all of your wet ingredients.
  3. I suggest mashing your bananas and pumpkin together in a small bowl on the side first before mixing in, and melting your coconut oil and honey together first before mixing in.
  4. Pour your batter into your two prepared loaf pans and sprinkle walnuts over the top.
  5. Slide your pans into the oven and bake for an hour.
  6. Enjoy!

This recipe, like all of my others, is subject to creativity. Fell free to use or not use nuts in this recipe. Maybe you’d rather chop them and mix them into the batter instead of putting them on top, or unsweetened shredded coconut sounds good mixed in. You might even decide to use a different kind of nuts or use pumpkin seeds instead. Anything you choose to do is going to be wonderful.

I’m certainly not a professional chef, and seeing as how my toddler is doing most of the work for most of my recipes, I’m not the neatest either.     • It sure can! Almond flour is lower in carbs than wheat flour overall, which you might enjoy. However, baking with almond flour rather than wheat flour may make your pumpkin bread a little flatter and denser because there won’t be any gluten in it. I sure do love the taste of almond flour though! You’ll have to let me know how it turns out for you. You can substitute it out 1:1, meaning 1 cup of one would equal 1 cup of the other.
