Barbecue Chicken Stuffed Sweet Potatoes
Who would have thought to combine bbq chicken, shredded cheese and sweet potatoes into one dish!! A very pregnant Victoria with a specific craving. I know it sounds weird, but after one bite, you’ll be hooked. Although the flavors don’t seem like they would be good together, they really are amazing.
What better way to give your family a vitamin packed meal in a fun way! My kids and my husband absolutely love this dish. It’s actually requested quite often in our home. And it’s easy to make a clean-eating dish by buying good quality sweet potatoes, or grow your own, buying organic chicken, and using a healthy bbq sauce, or making your own.

We’ve already gotten a few snow flurries around here and the temperature at night drops significantly. We have all been craving some hot meals at the end of the day to send us to bed warm. This meal is especially good on a cold, Fall evening to warm your body all over. Give it a shot and let me know what you think!
I don’t know the difference between yams and sweet potatoes, but don’t these look yummy already?! I start by washing them and poking holes in them with a fork. Then I typically cook them in the microwave with two presses of the baked potato button because I have very little patience.
Then I heat my previously cooked and shredded chicken. By cooking my chicken in the crockpot ahead of time, on a day when I don’t need it, I can set it in the morning and walk away, giving my self tons of great chicken to shred and store in the freezer for a bunch of quick meals later.
We like to make our own barbecue sauce from scratch. It just tastes better, but I’m sure you have a favorite.
I then shred some cheese. Yes, I have to shred ours because I buy it in bulk from Sprouts for much less than I can get anywhere else. When the potatoes are ready, I cut them open carefully. They’re super hot.
I slice them up like I would a regular baked potato and load it up with chicken and even more bbq sauce.
Finally I top it with tons of shredded cheese, and dinner is served. I have my meat, my dairy and my veggie all in one. Yummy!

Ingredients:
- 2 sweet potatoes
- 2 chicken breasts, cooked and shredded
- Your favorite BBQ sauce
- 1 cup shredded cheese
Instructions:
- Start by baking your sweet potatoes. You may wish to bake them in the oven at 400 degrees F for about an hour, or pop them into the microwave and cook them by hitting the baked potato button twice. It takes about 15 minutes in the microwave.
- If your chicken is not already cooked, I suggest cooking it while your sweet potatoes are baking. You can bake it alongside your sweet potatoes in the oven for the same amount of time, on the stove in a saute pan for about 30 minutes on medium, or my favorite preparation. I like cooking large batches of chicken in my crockpot periodically so I can bag up single servings of shredded chicken to keep in the freezer for quick uses.
- When your potatoes are ready, cut them open, just as you would for regular baked potatoes.
- Fill them with shredded chicken, BBQ sauce, and then lots of yummy shredded cheese.
- Just one potato makes for more than a meal for each of us. Yum!

I highly recommend purchasing a good crockpot to everyone.

My husband was skeptical at first, like he is of everything, but it turned out amazing. This is now one of our favorite meals, especially in the Fall when our own sweet potatoes are in season and we are trying to find fun ways to use them.
