With these deliciously easy clean eating gingerbread cookies, you'll be able to enjoy your favorite flavor of the season without the sugar or the guilt.So I realize that the gingerbread cookies in our pictures are shaped like cats, bats, skulls, and pumpkins (haha). We simply had a hankering for gingerbread cookies, being that’s it’s Christmastime and all, and didn’t have any Christmas cookie cutters to use.

We found these and some circle cookie cutters in all of our craft supplies when we went searching trying to see what we had available. Honestly, it’s not really about the way they are shaped, but the way they taste, and these came out amazing. The ghosts were my 1 years old’s favorite and the skulls and bats were my 4 years old’s favorite. Personally, I liked the pumpkins and cats the best. So the Halloween cookie cutters worked out well.

Our Clean Eating Diet

If you’ve been following my blog, you’ll know that we cook a little bit differently in our house. We don’t use any refined ingredients like white sugar and white flour. During processing, strong chemicals are added to strip them and bleach them, and they are subjected to extremely high temperatures, that literally kill all of the nutrients left. What you really end up with is a chemical-type substance with no nutrition.

Instead, we use all-natural ingredients, and organic ones where appropriate, like coconut sugar, coconut oil, raw local honey, pink Himalayan salt, etc. We like to affectionately call our diet “clean eating” because we we stay as far away from processed foods and refined ingredients as possible, eating only what we can make, or get from the Earth without the use of chemicals and preservatives.

Better Quality Recipes

What that creates though, is high quality, delicious recipes, or in this case, gingerbread cookies, that you can feel confident eating and feeding you family and friends. All of my recipes use healthy ingredients that are nourishing and healing to your body without being expensive or difficult to find.

I can take a huge bag of gingerbread cookies, along with our nuts, homemade crackers, and fresh fruits and veggies, on our road trips, car rides to run errands, and even fun places we go like the zoo, and let my kids chow down without having to worry about their sugar intake or whether they are getting the nutrients they need.

The thicker your dough, the thicker your cookies. Ingredients:

  • 3 cups whole wheat flour
  • 2 teaspoons ginger
  • 2 teaspoons cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon pink Himalayan salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup coconut sugar
  • 3/4 cup coconut oil, melted
  • 1/2 cup raw local honey, melted
  • 1 egg
  • 1 cup applesauce, homemade preferred
  • 2 teaspoons vanilla extract, homemade preferred

Instructions:

  1. Start by mixing all of your dry ingredients together in a large mixing bowl. I like to start with my dry ingredients so my measuring cups aren’t all messy when I need them to measure out my dry items.
  2. Then melt your coconut oil and honey together for 30 seconds or so in the microwave. Pour these into your mixing bowl. From there you can add all of your wet ingredients, or one at a time. I added one at a time to my recipe to help me with mixing everything.
  3. When thoroughly mixed, and you have a wet dough, separate your dough into two.
  4. Wrap each with saran wrap and refrigerate for about an hour.
  5. Preheat your oven to 350 degrees F and line a couple cookie sheets with parchment paper.
  6. Now take one piece of dough out at a time. Roll it out on a clean surface to about 1/4 inch thick. (You may need some extra flour on both sides to keep your dough from sticking to the counter and your roller.) The thicker your dough, the thicker your cookies.
  7. Press your cookie cutters into your dough firmly to cut all the way through your dough.
  8. Remove all of the extra dough around your cookies and press it all together on the side. You’ll be rolling it out again and again until you have used it all for your cookies.
  9. Place your cookie shapes on your prepared cookie sheets and bake for 10 minutes. Allow to cool for a few minutes and slide them off onto a towel to use your cookie sheets again. I think we did this at least 6 times before using all of our gingerbread cookie dough.
  10. Enjoy!

You could very easily dip them in chocolate, pipe them with melted chocolate or homemade icing, our use spoons to spread your icing and decorate them with crushed nuts, shredded coconut, dried fruit, or anything else you can think of. We thought they were amazing all on their own, and you’d be surprised how fast they went.
