Sweet and Flavorful Crock-pot Barbeque Chicken

So we’ve all had pulled pork sandwiches and shredded beef barbeque sandwiches. Both of these would be great with this barbeque sauce recipe in the Crock-pot. But this is a slightly easier, healthier recipe that can be made just about any night of the week. Most people don’t keep pot roasts and pork loins handy in the freezer for any random meal.


If you are using pork or pot roast, you likely have a meal in mind and usually make that meal pretty soon after purchasing the necessary ingredients. But chicken is one of the easiest, most versatile ingredients able to be cooked in just about any way to make a delicious meal. We like to cook ours ahead of time, shred them and keep them in the freezer for a quick meal anytime.

I also frequently toss chicken breasts into the oven, in a casserole with Italian or Ranch seasoning, at 400 degrees F for an hour for an amazing dinner. Chicken is even great with fruit, with veggies and gravy, with rice or mashed potatoes, with pasta sauce, and with preserves. It allows us to get creative with the ingredients we have in the pantry, and still have a filling, healthy meal to serve our family.

With a much quicker prep time in the Crock-pot than just about anything else, this makes for a quick meal for two, three, four, or a whole party in little to no time. I hope you enjoy it!

Fresh or frozen, all you need are three chicken breasts. But they will be harder to separate and take longer to cook if you don’t thaw them at least a little.

Add your bbq sauce and Italian seasoning.

Then add your sugar and Worcestershire sauce.

Mix gently, cover and cook on high for 4-6 hours.

You could use two forks, a hand mixer, or even a potato masher to shred all of your chicken.

Ingredients

  • 3 frozen chicken breasts
  • 1 cup your favorite BBQ sauce
  • 1/4 cup Italian seasoning, homemade preferred
  • 1/8 cup coconut sugar
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Set a medium to large Crock-pot to high temperature.
  2. Add your chicken breasts directly to the Crock-pot. You can thaw them ahead of time, but this recipe is meant to be as easy as possible. Regardless of whether they are thawed or frozen, they will turn out the same way. I do like to chop huge chicken breasts into small pieces for faster cooking though.
  3. Dump in your barbeque sauce, Italian seasoning (This is going to give your chicken a TON of wonderful flavor.), coconut sugar and Worcestershire sauce.
  4. You may want to mix them a little in the Crock-pot, marinating your chicken and spreading the flavor evenly.
  5. Put the cover on your crock pot and cook on high for 4 to 6 hours. This is great to start around lunch time to be ready for dinner.
  6. Check it every so often and keep marinating the sauce over the chicken breasts. Towards the end, you will want to try and help the chicken breasts begin falling apart. You can do this by using two forks to pull them apart.
  7. When it’s ready, ladle it onto a hamburger bun for an amazing sandwich! Serve it with some coleslaw and baked beans for the perfect meal.
  8. Yummy! This is one of my favorite meals.

So, I’d like to think that I’m this amazing cook. I always consider my weekly meal plan the weekend before, I always use the most healthy ingredients, and I always have dinner made right on time when my husband walks through the door. Not!

As hard as I work to be an amazing wife and a wonderful homemaker, it doesn’t always turn out that way. By the time I consider what to make for dinner (around 5pm each night), I have about 30 minutes to make dinner. This recipe calls for 4-6 hours in a Crock-pot. That’s tight trying to make any kind of dinner.

That’s why I love Crock-pot meals. Around lunch time, I can toss some ingredients together and know that when the afternoon gets hectic, I don’t have to worry about dinner. I can then spend my time doing other fun things, like making homemade hamburger buns and black-eyed peas to have with our dinner instead.

There’s nothing worse than making a huge batch of yummy shredded barbeque chicken only to discover you have no hamburger buns. Sure I could have used my homemade sandwich bread, but it’s just not the right ingredients for barbeque chicken sandwiches, so I decided to make my own. They only took about 10 minutes to make, and another 20 in the oven, and they were delicious! You should give them a try.
