So, as we are making our big move across the country in just a couple more weeks, our friends here in Colorado agreed to one more big family dinner before everything was packed. We cooked a huge turkey, made my corn casserole and yellow squash casserole, some amazing macaroni and cheese and steamed broccoli. We love these kind of get-togethers with friends and our children love playing together.

Of course, I made sure to take the opportunity to document both of my casseroles so I could share them with you. Of all of the dishes I make all year long, and boy do I have a lot of regulars that I love, these two are my absolute favorite. Many times I simply cook these two, and that’s what we have for dinner for a few nights, they are that good.

You know, with everything else being sold, packed, or scattered through the house, and our future being a little bit of an unknown, it’s nice to have some old faithful kind of dishes around. You know what I mean…those dishes that you have so often, and have been apart of your family for so long, that they taste like comfort and home, no matter where you are. These, I think, are going to be those kind of dishes that my children remember when they one day move out and have families of their own. Or at least I hope so.

And with as easy as they are to make, there’s no reason that they can’t be a family regular in your house as well. For us, these dishes say three houses and three states in the last ten years, two beautiful children and several we’ll meet in heaven one day, and having to leave a lot behind each time to find our dreams. Regardless of where we move, we still feel like we’re at home when we make these, and they help us remember all that we have been through as a family.

Start by chopping and steaming your squash on the stove for about 20 minutes (in a steamer basket or a little water in the bottom of a pot).

Ingredients

  • 4 yellow squash
  • 2 tablespoons grass-fed butter
  • 1 onion
  • 1 tablespoon minced garlic
  • 2 slices of whole wheat bread
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheese
  • 1/4 cup parsley
  • 1/2 cup sour cream or plain yogurt
  • 1 teaspoon pink Himalayan salt
  • 1 egg

Topping:

  • 1 slice of whole wheat bread
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 2 tablespoons grass-fed butter, melted

Instructions

  1. Preheat your oven to 350 degrees F and grease a large 9×13 inch casserole dish with some coconut oil.
  2. Start your dish by chopping your squash into small pieces and steaming it in a pot on the stove over medium high heat for about 20 minutes or so. If you have a steamer basket, this is when to use it!
  3. In a small saucepan, melt your butter.
  4. Then chop your onion, and cook it and your minced garlic in the melted butter until soft and translucent.
  5. In the meantime, pop your bread into the food processor or blender and process it down into bread crumbs.
  6. When your squash and onions are fully cooked and soft, transfer them to a large mixing bowl and add in all other ingredients, one at a time. Mix well.
  7. Pour your mixture into the prepared casserole dish and now let’s make your topping.
  8. Now it’s time to process your last bit of bread and mix it with the rest of your topping ingredients.
  9. Evenly sprinkle this mixture on top of your squash and slide it into the oven.
  10. Bake for about 45 minutes. You’ll smell it when it’s ready.

No packaging, no preservatives or food coloring, and no sitting in a truck or on a shelf for months before it gets to our kitchens.

I just know that all of these recipes were originally borne in homes where the food was clean, and fresh, and wholesome, and food was actually enjoyed to the fullest. I’ll have to share our adventures and all of our experiences with you when we get there. I think the unknown is definitely scary, and it’s going to be hard work, but it’s going to be exciting and worth every moment. This clean eating sweet potato spoon bread is great for any time of the day and any occasion. It would work well for a great holiday side dish, a nice savory breakfast, a hearty dinner, or even a sweet dessert depending on what extra ingredients you decided to add to it.

So my house is half packed, and the rest of it is up for sale. I feel like life is turned upside down right now. Thank goodness there’s a light at the end of the tunnel and in a few weeks we’re off to our new home! Cooking and writing are the only things that make me feel a little normal right now. I’m not sure exactly what to expect moving forward to a new state and a new home, but I am familiar with cooking and writing.

But one thing that I’m working on with only a few more weeks in the house, is getting rid of all excess food. I have to empty the freezers so I can sell them, empty the fridge so we aren’t wasting food when it’s time to leave, and get everything else packed up. So I’ve been trying to find creative ways to use all of our food. Thursday I made Pumpkin Spice Banana Bread and Pumpkin Spice Cookies to get rid if the frozen pureed pumpkin I had in the freezer, and the over-ripe bananas I had on the counter.

Last night I made good use of the sweet potatoes that needed to be cooked in the pantry. This is a little like a cross between my delicious Corn Casserole and and my Bread Pudding recipe. It’s a cornbread mixture, blended with soft sweet potatoes, and tons of milk. In the end you get a smooth a creamy bread recipe that you can scoop out with your spoon and eat. I made mine more of a savory dish yesterday, but we ended up eating it for dinner with a side of ice cream.

It’s all about balance right? It’s been a hard few months for all of us. Sometimes you have to bend the rules a bit when life calls for it. Let me show you how I made this amazing creation so you can too!

Begin by cooking your sweet potatoes. I chose to cook mine in the microwave for speed, poking fork holes in each of them first for venting. You could also bake them for an hour at 400 degrees in the oven, or boil them for 15-20 minutes, until soft, and slide the skins right off.

While they are cooking, get your milk heating on the stove over medium heat.

Add your seasonings and honey and whisk in.

Bring it to a boil and then turn the heat down. Make sure to whisk frequently to keep your mixture from burning.

Ingredients

  • 2 large sweet potatoes
  • 2 1/2 cups whole organic milk
  • 1/2 tablespoon thyme or cinnamon, (optional)
  • 2 teaspoons pink Himalayan salt
  • 2-3 tablespoons raw honey
  • 1 cup cornmeal
  • 4 eggs
  • 3 tablespoons grass-fed butter
  • 2 teaspoons baking powder

Instructions

  1. Preheat your oven to 350 degrees F and grease an 8×8 or round casserole dish with some coconut oil.
  2. Wash your sweet potatoes and poke holes in them with a fork for venting while cooking.
  3. I chose to pop them in the microwave to cook them quickly. I had to push the baked potato button twice. You could also have cooked them in the oven at 400 degrees F for about 45 minutes.
  4. In the meantime, get your milk heating on the stove over medium heat in a large saute pan.
  5. Add your seasonings and honey. I added some thyme for a more savory taste, but you could also add some cinnamon instead for a sweeter flavor.
  6. Bring your milk to a boil, whisking constantly so it doesn’t burn. Then turn the heat down to medium.
  7. Slowly add in your cornmeal, while whisking, to get a smooth mixture.
  8. When smooth and starting to thicken in the pan, remove your pan from the heat.
  9. Allow the mixture to cool a little bit and then add in your eggs and butter.
  10. If you haven’t already, cut open your sweet potatoes and mash them up inside the skins with a fork until smooth.
  11. Add these to your mixture and mix up the whole dish until it’s nice and smooth.
  12. Finally, add in your baking powder and blend in well.
  13. Now transfer the whole mixture over to your prepared dish and slide it into the oven.
  14. Bake for 40 minutes and check to see if it’s done by sliding a knife into the middle. It should come out clean. If not, or if it’s still jiggly in the middle, cook it for another 10 minutes.
  15. Your spoon bread will puff up in the oven and it will still be soft in the middle when you pull it out. But just know that it will deflate once it cools. Feel free to jump right in though as soon as it’s cool enough to eat without burning yourself.

This was an absolutely delicious treat for everyone at the end of another crazy day around here. I love thinking about the fact that the next time I make this dish, it will be in my farmhouse on land with animals. The milk and butter I’ll be using will come from our goat, the eggs will be from our chickens, and the thyme and sweet potatoes will come from our garden. I can’t wait!

What’s really great about this dish is that it works for some many different meals and occasions. It would be a delicious savory side dish to a holiday meal, or a nice sweet dessert. We had it for dinner last night with ice cream, and with a glass of milk for breakfast this morning. What ever way you decide to serve it, you’ll feel like you’re treating yourself.

We love putting it on our homemade biscuits, on toast, on chicken fried steak, on my oven-fried chicken, and even on my Salisbury steak. You really can’t go wrong with a yummy cream gravy recipe, and it’s even better when you can share it with good friends.

This last week we had some good friends over for breakfast for lunch. We made my homemade quiche and biscuits and gravy together. She cooked up a batch of sausage in the pan first (in lieu of using oil) before adding in the flour, seasonings and milk. We ate so much that no one was hungry for dinner later. It was amazing and we’ve been eating the leftover gravy on just about everything this last week.

We are currently in the middle of a huge move right now across the country to a completely different lifestyle, living on some land. And one great thing about moving is that we always have to get rid of all of our food. We currently have two freezers and a fridge full of food to empty in the next month, so we are cooking away.

I have a fantastic excuse, not to cook simply and cheaply, but to bust out all of my favorite meals. You know I’m going to be making my quiche that calls for around 12 eggs and all of my cookie recipes that eat up all of my butter. Last night I made Chicken Broccoli Alfredo Pasta, with my yummy Alfredo sauce. I don’t make it often as it takes a whole cup of butter and 8 ounces of cream cheese.

Feel free to experiment with this recipe. Maybe you like your gravy a bit thinner and need more milk, or thicker and need less milk. You might like other kinds of meat in your gravy, or other flavors. You could try to cook sausage or bacon in the pan first for an even different flavor.

Cooking is a lot of fun and experimenting with your recipes is even better. I always encourage my readers to try different things as I don’t even follow recipes to the tee myself.
